Easy Paella

Paella is a colourful rice dish from Spain, traditionally linked to Valencia and often enjoyed as a sharing meal

Paella
1 onion chopped
1 tbsp olive oil
1 tbsp paella-style seasoning: smoked paprika, thyme and garlic.
300g paella rice or risotto rice
1 tin chopped tomatoes
900ml chicken or vegetable stock
400g frozen seafood mix, defrosted
150g peas 2 peppers
chopped 1 courgette, chopped
To serve
Lemon wedges Fresh parsley, optional

Heat the oil in a large pan and cook the onion, peppers and courgette until softened.
Add the seasoning and rice, then stir for 1 minute.
Add the chopped tomatoes and stock. Simmer until the rice is nearly cooked.
Add the peas and seafood mix. Cook until the seafood is fully cooked through.
Serve with lemon wedges and parsley if using.
